According to Carolyn her journey began some time ago. “ Since I chose to make the switch for a healthier, plant based lifestyle almost 20 years ago, I really wanted to do it right. I read so many books on health and tried all sorts of offshoots from macrobiotic to raw and everything in between. Ultimately I ended up getting my Masters degree in Holistic Nutrition and started my PhD In Naturopathic Medicine, not so much to practice but for my own personal knowledge. I absolutely loved it and was so grateful to have gained that knowledge at a time where the information was nowhere near as plentiful as it is now. Additionally, I was growing tired of bowlfulls of guacamole, cucumber sandwiches and cardboard-like chocolate chip cookies so I went to culinary school,, to gain skills for myself to lead a healthier, tastier life! I really just wanted to make sure that I could find that healthy balance to prove that being vegan was not only great for your health but also fun, delicious and easy! I never had any plans to use my degrees for anything more than for my own personal knowledge and for my family and friends. In fact, I was working in PR when I finished my schooling and opened my own PR firm and it wasn't until a few years later that I put my nutritionist and chef cap on.” Launching her travel show and brand 'The Healthy Voyager’ was a natural next step: “I began to work with private clients while still working on PR and traveling quite a bit for work. In my travels, I really saw how difficult it was to travel outside of LA or NYC as a vegan. I did all sorts of things like pack my food, cook in my hotel room MacGuyver style (yeah, I would steam veggies in the coffee pot, make miso soup in the coffee kettle, etc) and even live off of terrible dry salads. I thought to myself “Hey, I can't be the only one who finds traveling difficult due to their dietary restrictions” and the idea for The Healthy Voyager was born. Knowing that there where so many people out there who were vegan, vegetarian, diabetic, gluten free, etc who where hesitant to travel because of the lack of food options, I wanted to create a resource to open the world up to everyone. At the time, the most popular travel shows where about overeating the most vile foods in excess or eating bugs and weird stuff in even weirder places. Nothing that actually benefitted the viewer. However, since it was in the infancy of the special diet world in the early 2000s, most networks didn't want to touch such a non-mainstream idea, yet. Luckily, having my own PR firm, I had the skills to build my own brand and so I did. Back in 2006, pre-dating “social media”, I launched The Healthy Voyager travel show on Youtube. And since I was producing it on my own with zero budget, I couldn't churn out shows but I could churn out blog posts, also very early in the online space. In many ways, I felt like I was shouting into space but quickly I began to see my following growing as there wasn't much for vegans online at the time, let alone traveling as a vegan. Over time I started sharing my recipes along with my travel stories and tips and now I have a full healthy and green lifestyle site at HealthyVoyager.com that still features my flagship travel show and now my cooking show, The Healthy Voyager's Global Kitchen, which so happens to be the name of my international cookbook as well. I also have the great fortune of sharing my travels on national tv on various shows including my recurring travel segment on Hallmark's Home & family show. I've had some pretty extraordinary experiences since launching my show and brand but here are the ones that really stand out for me: I had the wonderful opportunity shortly after launching my brand to go to Kenya with Virgin Unite (Virgin's philanthropic arm) to build dorms and bring water to a Massai Mara school in Kenya. Not only did I get a terrific Healthy Voyager episode from it, I had the chance to document it all for Virgin and spend lots of time with Sir Richard Branson, one of my entrepreneurial idols! My time in Kenya and working with Virgin was life changing and I will never forget it. Sometimes I get to bring people with me on my travels and one was hosting a week of Vegano Italiano! It was a wonderful trip where 12 people joined me in a gorgeous Italian villa in southern Italy, not far from Naples, for daily vegan Italian food, unique day trips and a whole lots of fun! I love being able to share my travels with friends and family while also making new friends. More recently, I was commissioned by the US Air Force to give talks and do cooking demos on bases around the world. A big honor for me to help those who protect us to protect themselves, my first assignment was on a base in Turkey not far from the Syrian border. With all that was going on the in the region, I was a bit hesitant but I figured if they thought it was safe enough for a civilian to head over there, then I would do it. And it was incredibly rewarding! I was really surprised by their enthusiasm to learn about a plant based lifestyle and at the cooking demos, the service men and women would come up for seconds and thirds! It was so great to see what they do and sacrifice for us overseas and I'm so honored to be able to serve our troops and promote the vegan lifestyle to such an important audience. While those really stand out, I have gotten to visit over 100 countries and this year I will have been to all 7 continents. It's incredible to see how vegan food and lifestyle has globalized and how easy it is to eat well across the globe! From a tiny ship in the Galapagos to Iceland, a ship in Antarctica to the desert lands of Africa, From Moscow to Melbourne, I can truly say that vegan travel is not only easy but delicious.” Carolyns Books and Recipes are unique. First, being half Colombian and growing up in Miami, her Latin roots have really permeated her cooking style. Plus her international travel has really inspired me to try all sorts of global foods. She tries to satisfy a number of diets with her vegan recipes from gluten free and low calorie without ever sacrificing taste. It's all about “Sabor” For example, her cookbook, The Healthy Voyager's Global Kitchen, is cookbook meets travel book. Every chapter is a different country or region, showcasing popular and traditional dishes from each location and veganized. Additionally, each recipe offers options for low/no oil, gluten free, soy free, etc so that everyone can enjoy all of the flavors the world has to offer. Her favorite thing about my cookbook and cooking show is being able to share the origin stories of these dishes, teach her readers about different cultures and traditions and giving them a culinary way to travel the world from their very own kitchen. She feels food is the glue that brings everyone together and learning to appreciate food traditions around the world, just unites us even more. For Carolyn there is always an adventure coming up. More and more travel, speaking engagements and appearances for sure. She is launching her line of healthy-to-go foods that will be the start of a whole line of vegan travel foods, supplements and more. In her own words, here is her story: Women and Life I am very pleased to be a part of this exciting and useful new venture of women who are contributing to further health in body, mind, and spirit. My field of interest and profession for the past 25 years has been astrology. As Astrologers originally were doctors and counselors I have a great interest in health and how our astrological charts outline areas that we need to watch out for and when health crises might occur. An astrological chart based on the day, time, year, and place of birth is truly a useful map to guide all phases of life. I came to Astrology through my first career as an actress in NYC. Of course everyone in the theatre wanted to know when they would be a star. I did too but after many shows, television and film, it seemed that the stars in the heaven were more my path. I began studying astrology and was fortunate to encounter an old school master who taught me. Before the proliferation of computers it was time consuming to calculate a chart and only the dedicated did so. Now it is very easy and we can get horoscopes delivered to our phones daily, weekly, or monthly. I imagine the ancient astrologer would have a good laugh about this. The computer has added valuable information to astrology but nothing can replace the one on one counselling that exists between astrologer and client. I feel fortunate to have worked with some people and families for over 25 years. In addition to counseling clients I have written 4 books on astrology. On the web I write regularly for HuffPost and for Thrive Global. Currently, I am promoting my graphic novel series for kids: Tree of Keys. 12 orphans under the influence of a lunar eclipse become ASTRO HEROES based on the talents and challenges of their star sign and save the world. My name is Amie Olson. My passion for Health & Wellness started in my teenage years when I started to take athletics seriously and wanted to compete. I realized through painful experiences, that what I ate hindered my performance, my gut, and also my mood. The list goes and on. I know I can't go back and make those changes but what I can do is educate my clients, community and friends to make smart decisions starting TODAY. Luckily our bodies can naturally heal itself, once we find and remove the interference. So, yes, their is hope for me as well as hope for everyone out there who has either a health problem or just a goal that they want to reach. Sometimes it is a few simple changes that will reap life changing rewards. I had allergies, fibroid tumors, arthritis in my knees and thumbs, recurring kidney infections, and I used an inhaler for my asthma. It's from Max Lucado's On The Anvil titled "Today I Will Make A Difference" Today I will make a difference. I will begin by controlling my thoughts. A person is the product of their thoughts. I want to be happy and hopeful. Therefore, I will have thoughts that are happy and hopeful. I refuse to be victimized by my circumstances. I will not let petty inconveniences such as stoplights, long lines, and traffic jams be my masters. I will avoid negativism and gossip. Optimism will be my companion, and victory will be my hallmark. Today I will make a difference. I will be grateful for the twenty-four hours that are before me. Time is a precious commodity. I refuse to allow what little time I have to be contaminated by self-pity, anxiety, or boredom. I will face this day with the joy of a child and the courage of a giant. I will drink each minute as though it is my last. When tomorrow comes, today will be gone forever. While it is here, I will use it for loving and giving. Today I will make a difference. I will not let past failures haunt me. Even though my life is scarred with mistakes, I refuse to rummage through my trash heap of failures. I will admit them. I will correct them. I will press on. Victoriously. No failure is fatal. It's okay to stumble - I will get up. It's okay to fail - I will rise again. Today I will make a difference. I will spend time with those I love. My spouse, my children, my family. A man can own the world but be poor for the lack of love. A man can own nothing and yet be wealthy in relationships. Today I will spend at least five minutes with the significant people in my world. Five quality minutes of talking or hugging or thanking or listening.
